Let's get this straight: against a fully armoured opponent, if you're not also wearing full armour, you're at a major disadvantage. There's always techniques you could use to still come out on top, but all of them require one thing to make it work: aggressive initiative. In the first clip, you see the Landknecht fight well, striking many blows, but unfortunately for him only hitting the armour. This makes the fight go on for so long that the armoured knight eventually gets a good hit in to end the fight. In the second clip, an opportunity arises and the Landsknecht does not stop attacking until the knight loses his pollaxe and is at his mercy. Of course, both fighters are exercising a certain measure of control to keep things safe despite kit not being fully protective, but I think the difference is clear enough to illustrate the principle. :)
