My whole family and friends like it so much! The most tender veg patties with lentils and zucchini that melt in your mouth! Simple and easy vegan recipe everyone can make at home. Happy cooking and wishing you a wonderful day! 😊 💖 💬 Let me know in the comments if you enjoy my vegan recipes. ❤️ SUBSCRIBE to see new recipes: ℹ️ With the ingredients listed in the recipe you get about 10 delicious patties. 🥣 Ingredients: 7oz | 200g | 1 cup yellow lentils 16fl oz | 450ml | 2 cups water 7oz | 190g | 1 medium size zucchini 1 chopped onion 1 minced garlic clove 3oz | 85g | 1 cup almond meal 6 sun-dried tomatoes about 10 olives salt and black pepper for seasoning 1/2tsp Korean chilli flakes 🧑‍🍳Cooking tips: ❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour. ❗You can substitute Korean chilli flakes (gochugaru) for crushed red pepper flakes or cayenne pepper. 🥣 Method: Place 7oz | 200g | 1 cup dried yellow lentils in to a pot Add 16fl oz | 450ml | 2 cups water Simmer for 30 minutes Grate 1 medium size zucchini Place to the fine mesh sieve Add pinch of salt, mix and set aside for 5 minutes Sauté 1 chopped onion for about 3 minutes until translucent Add 1 mince garlic clove Add cooked lentils and sautéed onion to a large mixing bowl and mash Add 3oz | 85g | 1 cup almond meal ℹ️ You can substitute almond meal for any flour of your choice. Add grated zucchini Cut 6 sun-dried tomatoes Chop about 10 olives Season with black pepper, salt and 1/2tsp Korean chilli flakes Lightly oil a frying pan ℹ️ To make the patties, shape lentils mixture into balls, then flatten it into a circle. Make 2oz | 60-70g patties. Cook over medium heat with the lid on for about 5-7 minutes. Flip patties over and cook with the lid on for another 5-7 minutes or until golden brown. Serve these delicious veg patties with a dairy-free yogurt, salsa or your favorite sauce and enjoy! ℹ️ You can have these patties hot or cold. I like both versions.
