INGREDIENTS: 2 cans (15 oz each) (460 grams) lentils green, black, brown / sub 3 cups cooked lentils / or 1 cup dried boiled in 4 cups water and 1 teaspoon salt until tender. 4 tablespoons all-purpose flour or chickpea flour ¼ cup (8 grams) parsley chopped 2 tablespoons cilantro optional 1 medium onion coarsely chopped 3 cloves garlic coarsely chopped 1 teaspoon ground cumin 1 teaspoon ground coriander 4 tablespoons nutritional yeast or grated parmesan cheese 1 teaspoon salt ⅛ teaspoon black pepper 4 wedges lemon OVEN-BAKED: Arrange patties on a baking tray lined with parchment paper and bake in a preheated oven at 400°F or 200°C for 20 minutes or until golden brown.
