Book: or wherever you get books Subscribe: Here is a recipe for Chicken Tinga from Mely Martínez I've used different recipes over the years but here's the way I went about it recently: RECIPE Chop up one large or two smallish mediumish yellow onions Chop up a few cloves of garlic or more if you're feeling dangerous Chop up two chipotle peppers or more if you're feeling dangerous Sauté those things in a saucepan on medium until you get bored Add broth, a can of diced tomatoes (or just go with crushed if you don't want to do any blending) or go with fresh tomatoes. You could use most tomatoes. Except evil ones Add in a teaspoon of probably two Add in some cumin if you feel like it (a couple teaspoons ish) Add in some oregano, or Mexican oregano, or as they call it in Mexico,: orégano Get that cauldron bubbling until you can feel the spirits fill the room Add in 3 chicken breasts and simmer for 25 minutes Take the pot off the heat and take the chicken breasts out and shred Once the sauce has cooled enough use a stick blender to make it smooth Add the shreds back in Adjust the salt and cook it until it's a consistency you like Make sure to fry your tortillas Add some chicken, lime crema, avocado, cilantro, and cotija cheese Accept your award for Excellent in Pot Size Estimation Try not to brag too much to your friends because some people really struggle with estimating liquid volume and it's not fair that you were born with such a tremendous gift.
