Facebook - Twitter - Makes - 12 () Meatballs Ingredients - Meatballs - 1 Tbsp (20ml) - Olive Oil 500g () - Beef Mince (See Notes) 2 - Garlic Cloves, Minced 25g () - Fresh Ginger, Peeled & Minced 2 - Spring Onions (Scallions), Root End Only & Thinly Sliced 70g () - Gochujang Korean Spice Paste 1 1/2 tsp () - Sea Salt Flakes 2 tsp (20 Cracks) - Black Pepper Sauce - 120g () - Plum Jam 70g () - Gochujang Korean Spice Paste 1 Tbsp (20ml) - Rice Wine Vinegar 1 Tbsp (20ml) - Soy Sauce Garnish - 2 - Spring Onions (Scallions), Stem End, Thinly Sliced Toasted Sesame Seeds Salad - 80g - Red Cabbage, Thinly Sliced or Grated 80g - Wombok, Thinly Sliced or Grated 1/2 - Small Beetroot, Thinly sliced or Grated 1/2 - Small Carrot, Thinly Sliced or Grated 5g () - Fresh Mint, Roughly Torn Salad Dressing - 1 tsp (5ml) - Toasted Sesame Oil 1 tsp (5ml) - Extra Virgin Olive Oil 1 tsp (5ml) - Soy Sauce 1 tsp (5ml) - Rice Wine Vinegar 1/2 tsp () - Maple Syrup 1 - Garlic Clove, Minced 5g () - Ginger, Peeled & Minced Method - Combine all ingredients in a bowl and whisk vigorously to combine. Recipe Notes, Storage and Reheating Information - Beef Mince can be substituted for pork or chicken mince. Rice Wine Vinegar can be substituted for white vinegar For storage, you can freeze the meatballs once they have been rolled out for up to 6 months, fully defrost before using. They can also be stored in the fridge for up to 4 days. Once the meatballs have been cooked and are not in the sauce they can also be stored in the freezer for up to 6 months. They can also be stored in the fridge for up to 4 days. The sauce on its own will last up to 3 weeks in the fridge stored in an airtight container. It can also be frozen for up to 12 months. Unfortunately, once the sauce is on the meatballs it can not be frozen. The meatballs in the sauce will last up to 4 days in the fridge. To reheat the cooked meatballs, place them into a pan with 1 tsp (5ml) of olive oil and heat over medium heat for 4-5 minutes turning them regularly. Once the meatballs are hot add in the sauce and heat for 2-3 minutes turning the meatballs in the sauce.
