A calm and peaceful beginning of spring - my slow life during first days of March in English countryside. I've been quite impatiently waiting for Spring, but it started snowing and raining heavily. My area didn't get too much snow and instead we had days of rain and hail. I still managed to get out and catch a bit of sunshine :) ________ Candles were gifted without any obligation - I genuinely liked them and decided to share :) MYTHOLOGIE CANDLE GIVEAWAY: I genuinely fell in love with these candles - they are made out of natural coconut blend wax and have a wood wick that crackles beautifully when it burns. The Cottagecore collection has three beautiful scents. These scents are not too strong, which is what I love! This is what they smell like to me: - Secret Garden - smells like wildflowers and cut grass. - Afternoon Tea - sweet tea with honey - Stone Cottage - cozy fireplace and wet stone (this one is my favourite!) All three candles come in a stunning box with an English cottage painted on it! ________ The Best (in my opinion) Banana Bread recipe: 3-4 very ripe bananas 2 eggs 60g olive oil 150g maple syrup or honey 300g sour cream or natural yoghurt 210g flour (I used gluten free blend) 100g almond flour 1 tbsp vanilla extract 1 tbsp cinnamon 1/4 tsp salt 1 tsp baking soda Roasted walnuts and dark chocolate to taste (I had about 100g of nuts and 90g dark chocolate bar) Mash bananas with fork, then add eggs, oil and maple syrup and whisk well. Add yoghurt (or sour cream) and vanilla extract and mix. Then add plain flour and almond flour - no need to sift. Add cinnamon, salt, baking soda and mix again. Roast some walnuts on a baking sheet for 5 minutes, chop coarsely. Chop a bar of chocolate. Add to the bread batter at the end. Line a rectangular bread pan with baking paper and grease with oil. Pour the batter in. Make sure your pan is big enough as this bread will rise a bit! Bake for 50 minutes at 180C/ 355F Oil, yoghurt/ sour cream and almond flour are very important in this recipe as they are what makes this bread incredibly moist!
