These date roll cookies were in the Egyptian cookbook I brought along with me. Dates are available almost everywhere in Egypt so I decided to pick up some really fresh dates from the local produce guy and make these cookies. They turned out really delicious and yummy. Sift flour into a large bowl. Add baking powder and mix well. In a separate bowl, mix oil and orange juice. Add juice mixture to flour and mix. Use a rolling pin to flatten dough into a rectangle. Spread date paste on dough and roll it up, long side. Use a very sharp knife to cut dough into 2 inch pieces. Place cookies seam side down on a greased cookie sheet. Bake about 15 minutes or until golden brown. To make date paste, soak one pound of dates in hot water for 15 minutes.
