To build quads, use an ascending set after proper warm-up. Begin with 5 reps using 6 plates per side and add a single plate every time you complete 5 reps until you finish with 8 plates per side. In the end you'll have done 25 total reps via 5 reps bouts with brief pauses while a training partner adds plates. – Mark Dugdale
