Ingredients Quantity Coriander Seeds 1 tbsp Fennel Seeds ½ tsp Caraway seeds ½ tsp Stone Flower 1-2 no Star anise ½ no Cloves 2-3 no’s Green Cardamom 3-4 no’s Black Cardamom 2 no’s Black pepper 1 tsp Poppy seeds 1 tsp Cinnamon stick 1 inch Kashmiri red chilli whole 5-6 no’s Asafoetida ¼ tsp Nutmeg powder a pinch Water as required Garlic cloves 4-5 no’s Ginger slices 1 inch Fresh grated Coconut ½ cup 2 tbsp for garnish For Gravy Oil 4 tbsp Cumin seeds ¼ tsp Bay leaf 2 no’s Onion chopped 3 no’s Star anise 1 no Ginger and garlic paste 1 tsp Green chillies chopped 2 no’s Chicken curry cut 800 gm Red chilli powder 1 tsp Turmeric powder ½ tsp Salt to taste Prepared masala Coriander sprig for garnish. Method. 1. In a kadai add coriander and fennel seeds, shahi jeera, stone flower, star anise, cloves, green and black cardamom, black pepper, poppy seeds, cinnamon stick and Kashmiri red chilli mix well and dry roast for 1-2 mins. 2. Now add the roasted masala in a mixer jar. 3. Then add asafoetida, nutmeg powder and water grind it well. 4. Now add garlic cloves and ginger slices, fresh grated coconut and water and blend into a smooth paste. 5. Heat up a kadai add oil, cumin seeds, bay leaf and onion chopped mix well and saute for 1 min. 6. Then add star anise mix well and saute for 2-3 mins. 7. Now add ginger and garlic paste and green chilli chopped mix it well and saute for 1-2 mins. 8. Further add chicken curry cut and saute on high flame for 2 mins. 9. Now add red chilli powder, turmeric powder and salt mix well and saute for 30 sec. 10. Then add prepared paste mix well cover and cook the chicken for 15 mins. 11. Now open the lid and mix well. 12. Lastly add grated coconut mix well and add reserved masala water mix well and cook for 1 min. 13. Remove the chicken in a serving bowl. 14. Garnish with fresh coconut grated and coriander sprig.
