RECIPES hazelnut chocolate cookies 1/3 cup organic sugar 1/3 cup neutral oil 1 cup all-purpose flour 1/3 cup raw hazelnuts 1/4 tsp. salt 2 Tbsp. cold water 1/4 cup vegan chocolate chips Heat the oven to 350 degrees Fahrenheit. Toast the hazelnuts on a pan for 10 minutes. Let cool, and then grind in a food processor until finely ground. To a bowl, add sugar, and oil. Stir well. Add flour, ground hazelnuts, and salt. Stir well. Add cold water, and stir until evenly combined, and the dough comes together. Roll the dough into 24 balls, and place on a pan lined with parchment paper. Bake 10-12 minutes. Let cool completely. Melt the chocolate chips (I did this in the microwave, for 30 seconds at a time, stirring between each interval). Transfer to a plastic, or piping bag. Spread the chocolate on the bottoms of half of the cookies, and sandwich together with the rest of the cookies.
