A Maori hangi is a traditional cooking method used by indigenous New Zealanders. In fact, all Polynesian people have some version of the hangi. The New Caledonians have the “bougna“, the Fijians the “lovo“, the Samoans the “umu“ and the Hawaiians the “luau“. Apparently the Peruvians have a version of it too!
