The solution is to increase INT just at level 4 (for 3 INT), or wait until around Chapter 2 for the Heaband/respec your pet after that if you prefer. The extra point in Intelligence shouldn’t reduce the effectiveness of your pet if needed. For the Tanky Horse, who gets a feat that requires 3 INT earlier than level 4, simply delay Improved Unarmed Strike to level 5, and then add Weapon Focus: Bite at level 3 instead.
