(Some cosy language!) Hi cosy people! Hope you don't mind about the change of video posting time! It's just for this time during the lead up to our wedding - we are so excited!! Here's a COSY video with some nice suggestions to get you in the mood to learn English this Autumn :-) I've got book recommendations, film recommendations, something to eat and drink, and of course some new language to start using! Enjoy! My Great Grandmother Violet's Sticky Toffee Pudding (Slightly modernised so ingredients are available!) (Makes 9) 200g dried pitted dates 300ml water 60g butter (softened) 150g soft dark brown sugar 2 eggs (beaten) 2 table spoons (tbsp) of golden syrup 2 table spoons (tbsp) of treacle 1 tea spoon vanilla extract 200g Self-raising flour 1 table spoon of bicarbonate of soda For the toffee sauce: 100g butter, 100g soft dark brown sugar, 150ml double cream 1. Pre-heat your oven to 180°c (160°c for fan oven or Gas Mark 4!) Grease a square 8 inch baking tin with butter/margarine and set aside. 2. Place your dates and water into a small pan and bring to the boil. Turn down the heat to a simmer for a minute before removing from the heat and setting aside to steep. 3. In a large bowl, cream together the butter/margarine and sugar until it is well combined. Add the syrup, treacle, eggs and vanilla extract and mix until combined. 4. Gently sift in the flour and fold together to create a batter. Set aside. 5. Mix the date and water mixture and then add the bicarbonate of soda and mix. The mixture should have a frothy consistency. 6. Whilst the date mixture is still warm, add it to the batter and mix to combine before pouring the completed batter mixture to your pre-greased baking tin. 7. Bake in your pre-heated oven for 30-35 minutes until the pudding is firm. Once cool enough to touch, turn the pudding out onto a wire rack to cool completely. Once completely cool, use a knife to loosen the edges from the tin and cut into 9 individual portions. For the Toffee Sauce Place the butter, brown sugar and cream into a small pan and gently bring to a boil before reducing the heat to simmer for a few minutes, continuously stirring.
