Radish Cream Cheese 200g radishes, quartered (about 8 medium) 2 scallions, sliced 226g (8oz) cream cheese (1 standard pack) Lemon juice to taste Salt to taste Process the radishes with a pinch of salt in a food processor. Remove to a fine mesh sieve and press firmly to get all the water out of them. Alternatively, remove them to a bowl and squeeze in handfuls. Put the drained radishes back into the food processor. Add the scallions and lemon juice and puree. Taste and correct for seasoning with salt and lemon juice. Can be stored in the fridge for up to 5 days. It will turn more pink and pretty.
