Enjoy your Soya Methi Matar Malai. #easyrecipes #vegiterian #soya #matar #malai #methi Ingredients Quantity Watermelon rind ½ no Water for boiling Cashew nut 10 no Watermelon seeds 1 tbsp Oil 2 tbsp Bay leaf 2-3 no Cumin seeds ½ tsp Oil 1 tbsp Ginger chopped ½ inch Green chilli chopped 3 no Fenugreek leaves 1 no Green cardamom powder ½ tsp Garam masala ½ tsp Black pepper powder ½ tsp Kasuri methi powder 1 tsp Sugar 1 tbsp Salt to taste Curd ¼ cup Soya soaked 1 cup Green peas 1 cup Fresh cream 1 cup Coriander leaves ½ cup Kasuri methi powder for sprinkle Coriander leaves for garnish Method Take a watermelon and cut into pieces. Separate the rind and cut it roughly. Place a kadai on low flame, pour water into it and let it boil. Peel the skin of the watermelon rind. Then add watermelon rind, cashew nuts and watermelon seeds. Boil for 4 min till it’s becomes soft and then strain. Take a kadai on medium flame and add oil. In a mixer jar add boil watermelon rind, cashew nut, watermelon seeds, some water and Grind the smooth paste. Add bay leaf, cumin seed and ground paste. Keep a lid on it and fry for 8-10 min. Take another kadhai on medium flame. Add oil, ginger chopped, green Chilli chopped and sauté it. Wash methi leaves in water and squeeze it to extract water. Then add on that kadai and sauté for minute. Add a little water, cardamom powder, garam masala, black pepper powder, kasuri methi, sugar, salt and sauté properly. Add curd, soaked dry soya, matar, sauté methi and fresh cream cook them until its boiling. Add fresh coriander and mix well. Take out in serving bowl and sprinkle kasuri methi and chopped coriander on top.
