Tomato bhurji makes a great meal, when you eat it with bread (brown, if you're feeling guilty about the butter & cheese) or roti. You can use this recipe for variations with eggs and paneer. Ingredient Quantity Oil 2-3 Tbsp Cumin seeds 1 tsp Ginger chopped 1 Tbsp Garlic chopped 1 Tbsp Green chilli chopped 3-4 no. Onion chopped 1 no. (Big size) Tomato chopped 3 no. Salt to taste Red chilli powder 1 tsp Coriander powder 1 tsp Turmeric powder ¼ tsp Kasoori methi 1 tsp Coriander chopped 2-3 Tbsp Gram flour 3 Tbsp Lemon juice ½ no. Water as required Method: 1. Heat oil in pan, add cumin seeds, chopped ginger, garlic and green chillies, mix well and sauté for 1 min. 2. Add chopped onion, mix well and sauté for 2-3 no. 3. Add chopped tomatoes, mix well and sauté for 1 min. 4. Add salt, mix well and sauté for 2-3 min. 5. Add red chilli powder, coriander powder, turmeric powder and kasoori methi, mix well and sauté for 3-4 min. 6. Add chopped coriander, mix well and sauté for 1 min. 7. Add gram flour, mix well and sauté for 2-3 min. 8. Add lemon juice and sprinkle little water and mix well. 9. Remove in serving bowl, garnish with coriander leaves and serve hot.
