Tuna × mayo × bonito flake onigiri 150g () cooked rice 1/2 canned tuna, drained 1 tbsp mayo 1 tbsp soy sauce 1/2 tsp bonito dashi powder some bonito flakes *recommended to make 2 onigiri to use a whole can of tuna 2. Salmon tartare onigiri (negi toro) 150g () cooked rice nori (optional) 1 tbsp salmon tartare paste ■Salmon tartare paste 100g () smoked salmon 1-2 tsp soy sauce wasabi spring onion 3. Kombu onigiri 150g () cooked rice nori (optional) 1 tbsp seasoned kombu ■Seasoned kombu 1 piece of kombu 150ml water 1 tbsp sugar 2 tbsp soy sauce 2 tbsp mirin 2 tbsp sake 1 tsp vinegar 4. Shrimp mayo onigiri 150g () cooked rice nori (optional) 1 tbsp shrimp mayo ■Shrimp mayo 6-7 boiled shrimps 1 tbsp mayo 1 tsp soy sauce 1 tsp mirin 1/3 tsp sugar 5. Fried rice like onigiri 150g () cooked rice 1/2 egg, scrambled 1/2 tsp Chinese chicken essence powder 1/2 tsp sesame oil salt and pepper spring onion *recommended to make 2 onigiri to use one egg 6. Grilled salmon onigiri 150g () cooked rice nori (optional) 1 tbsp seasoned salmon ■Seasoned salmon 1 salmon 1 tbsp sake 1 tbsp mirin 1 tbsp soy sauce some salt ------------------------------------------------------- 🔽Tips 1. When your onigiri falls apart Tip1 Use Japanese rice or sushi rice. Easiest way is get sushi rice from your local supermarket :) There is rice for making mochi in Asia which is called “sticky rice” or “sweet rice” or “glutinous rice”. This type of rice is not for making onigiri. ——————— ↓Recommended rice brand (affiliate link) Toyama Koshihikari Nishiki ——————— Tip2 Don't put too much water or too less water when you make rice. If you use a pot to make rice, put 200ml ( US cup) water for 1 rice cup (180ml = 3/4 US cup) If you use a rice cooker, just follow the measuring line Tip3 If the onigiri is too small for your hands, it would be difficult to press hard. If it feels hard to press, use 200g (7oz) cooked rice for one onigiri instead of 150g (). Tip4 When making onigiri, make sure you use warm rice. If it's cold, it's dry and doesn't hold together :( If it’s cold, microwave rice with a lid for a while. It will be warm and sticky. Tip5 If you put too much filling, it would also be difficult to shape onigiri. Put less filling :) 2. When the rice stick to your hand Tip Put the hands in cold water before making onigiri. If your hands are warm and dry, the rice sticks to your hands. Cool your hands down and make them slightly wet! ------------------------------------------------------- ★About seasonings ——Substitute for Mirin and Sake—- If you can’t find mirin or sake in your city, you can substitute them like this👇 For 1 tbsp mirin use either: 1 tbsp sake 1/2 tsp sugar or 1 tbsp white wine 1/2 tsp sugar For 1 tbsp sake use: 1 tbsp mirin or 1 tbsp white wine It won’t be exactly the same, but still works 😋 ——Recommended products on Amazon US—— *I would recommend you to buy the products in Asian supermarkets.
