This traditional Easter cake is not often seen these days. I’ve never actually seen a simnel cake in a shop, but it may be because it’s a bit regional. Bury, and Lancashire, have a version of simnel cake, and so does Shropshire - their version includes saffron. The simnel cake is a rich fruit cake, similar to a Christmas cake but not as dense and heavy. Simnel cake has some marzipan hidden away in the middle, and there’s a layer of marzipan on the top. But the main feature of a simnel cake is the 11 balls of marzipan arranged around the edge. These represent the Apostles, minus Judas.
