Preheat your oven to 350°F (180°C) and line a cupcake pan with paper liners size 3 inch. 2. In a large bowl, whisk together the eggs and vanilla until it becomes foamy. 3. Add sugar to the mixture and whisk again until it becomes fluffy and creamy. 4. Add oil and blood orange juice, and whisk again until well combined. 5. Gradually add the dry ingredients of flour and baking powder, and mix until just combined. Avoid overmixing the batter. 6. Fill each cupcake liner about two-thirds full with batter to get a dome shape or fill almost full for a mushroom shape. 7. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. 8. Once done, remove the cupcakes from the oven and allow them to cool in the pan for a few minutes before transferring them to a wire rack to cool completely. Enjoy!
