A great contribution to any kitchen is stored Canned Foods! Let's start with canned tomatoes and tomato sauce with my older sister's gorgeous recipe! Canned Tomatoes For the Peeled Tomato: 5 lbs ripe whole Roma tomatoes Fresh Basil leaves Canning and pickling salt ‼️ I made these the traditional mediterranean way and we never use lemon juice, but I have been reading a lot of comments and dms warning us about the potential issues with this approach. So, please consider adding 2 tbsp bottled lemon juice to each jar. Instructions In a large pot, bring the water to a boil and boil the jar and new lids (never use old lids!) for 10 min to sterilize them. Remove them from the water and dry them. Wash all the vegetables well. In a large pot, bring the water to a boil. Cut a small X in the bottom of the tomatoes and add the tomatoes into the hot water. Cook them for about 2-3 min. Remove them from the pot into iced water to cool them quickly. Using your hands (better put some gloves on), remove the tomato skins and place into a bowl. Preparing the Peeled Tomato and Tomato Sauce: Cut the Tomatoes in half and transfer them to a bowl. Add salt. Place tomatoes into the sterilized jars with fresh basil leaves in the middle and top. Fill jars with tomato sauce. Place the lids on the jar and seal the top. Transfer the jars into the water. The jars should be fully covered by 1 or 2 inch water. Cook them for 40-45 min, remove jars from water and store them in a cool and dark place until use.
