This is @ChefPriyankaNaik's take on a traditional Maharashtrian Indian dish called shaboodani but with a modern twist. It’s a nostalgic delight for Priyanka, as she grew up eating it every Saturday with her family as a first generation Indian-American in NYC. She loves this dish so much that she developed an easier-to-make version for her cookbook, The Modern Tiffin, that uses pearl couscous in lieu of white pearl tapioca.
