Ingredients: 3 eggplants, chopped into cubes 3 long green peppers, sliced 4 potatoes, peeled and cubed 7 cloves of garlic, minced 5 medium tomatoes, chopped 1 medium onion, sliced 3 tablespoons olive oil Salt and pepper to taste 1 teaspoon dried oregano 1 teaspoon paprika (optional) Fresh basil or parsley for garnish (optional) Instructions: Prepare the Vegetables: Chop the eggplants into cubes. Slice the long green peppers. Peel and cube the potatoes. Mince the garlic. Chop the tomatoes. Slice the onion. Cook the Potatoes: Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the cubed potatoes and cook for about 10 minutes, stirring occasionally, until they start to soften and brown. Add the Onion and Garlic: Add the sliced onion and minced garlic to the pan with the potatoes. Cook for another 3-4 minutes until the onion becomes translucent and the garlic is fragrant. Add the Eggplants and Peppers: Add the chopped eggplants and sliced green peppers to the pan. Drizzle another tablespoon of olive oil over the vegetables. Cook for about 10 minutes, stirring occasionally, until the eggplants and peppers begin to soften. Add the Tomatoes: Add the chopped tomatoes to the pan. Season with salt, pepper, dried oregano, and paprika (if using). Stir everything together and cook for another 10-15 minutes until all the vegetables are tender and the tomatoes have broken down into a sauce. Final Adjustments: Taste and adjust the seasoning with more salt and pepper if needed. Drizzle the remaining tablespoon of olive oil over the vegetables.
