In this installment of Mario Batali Presents, we take a look at the simple beauty behind Duck Eggs with Mojama, a staple at Casa Mono and one of the most delicious things you will ever eat. We go behind the scenes to the farm where the eggs were born and speak to Lynn Bishop about her ducks. The key to the recipe is finding the best ingredients. The duck eggs they use come from a goat milk farm! The ducks at the farm produce about 30 eggs per day. The origin of the dish is a truffle and egg dish, but in order to anchor it to Spain they include mojama. They finish off the dish with a black truffle vinaigrette!
