My book “Four-Season Food Gardening” is currently on sale on Amazon! The link is below, thanks for your support! 💚 Misilla ➡ Order book: The name of this plant is Oca (Oxalis tuberosa), a herbaceous perennial shrub growing to about 18 inches tall. It is native to the Andes Mountains of South America and is grown for its tasty tubers or rhizomes, although the stems and leaves are also edible. (Plant Family: Oxalidaceae, wood sorrels)🌿 ✳️Oca has a long growing season and can take 6-12 months before the tubers develop and mature in fall when days are shorter. The rhizomes grow to about 4 inches long and 1 to 1.5 inch wide. Each plant can yield 1-3 pounds depending on growing conditions. ☃️The tuberous stems can overwinter underground or grown as a perennial crop in mild climates (USDA zone 7-9). I usually place a 6-8 inch layer of mulch to allow for winter harvests preventing the soil from hard freeze. Tubers can rot from excess moisture in the soil. Ensure the soil drains well. 🥔Raw Oca reminds me of a mild starfruit. The red and dark pink ones are mildly sweet and tangy. When cooked it has a faint flavor of potatoes with sour cream. The raw tubers are crisp and are great sliced in salads or alone. 🥗 😋The tuberous stems come in array of vibrant colors including, red, yellow, orange, apricot, and pink. Have you grown Oca before? Let me know in the comments! Happy Gardening!💚🌿💚🌿 #shorts #vegetablegarden #organicgardening #gardening #growfood #growyourownfood #sustainable #foodforest
