Here's what you'll need: DOUGHNUTS: 1/3 cup milk (80ml) 2 large eggs 2 tbsp sugar (30g) 1 tsp instant yeast (3g) 2 cups bread flour (250g) 1/2 tsp salt 3 tbsp unsalted butter (36g) COFFEE CREAM FILLING: 1 tbsp instant coffee (8g) 1 tbsp hot water (12ml) 1/4 cup softened cream cheese (55g) 3 tbsp sugar (45g) 1 cup whipping cream (240g) 1/2 tsp vanilla (3ml) Sugar for dredging 1.5 liter of oil for frying 1. In a mixing bowl, mix together milk, eggs, sugar and yeast. Then add bread flour and salt. Mix until incorporated. 2. Then add softened butter, mix and knead until smooth. Smooth into a ball and cover for 1 hour or until doubled in size. 3. Press proofed dough to release gas. Transfer to a floured counter. Divide into 8 equal pieces. Smooth into a ball. Cover and bench rest for 10 to 15 minutes. 4. Press dough ball and smooth into a ball again. Let it proof for 30 minutes. 5. Heat oil over medium low, then fry proofed donuts 2 to 3 minutes on one side then flip and fry for 1 minute. 6. Let it drain in rack or paper towel. 7. Dredge in sugar. Poke or cut hole using a scissor or knife. Set aside to prepare the Coffee Cream Filling. 8. In a small bowl, mix instant coffee or hot water. Add to softened cream cheese. Mix until smooth.
