Rachel Khoo shares her crunchy and vibrant bacon, brussel sprout and kale salad with clementine segments. A delicious alternative to soggy Christmas vegetables! Crispy Bacon, Clementine and Kale Salad Preparation time: 10 minutes Cooking time: 15 minutes Serves 4-6 Ingredients: Couple handfuls of brussel sprouts, cleaned and cut in half Several handfuls of kale, washed 4 clementines, in segments 200g lardons or chopped smoky bacon Olive oil Pinch of salt Method: 1. In a large frying pan, add the lardons. 2. Fry for a couple of minutes before adding the brussel sprouts. Continue to fry until golden. 3. In a large bowl, add your kale and cut up your orange segments. 4. Pour the bacon and sprouts into the bowl. 5. Toss together with some salt and a drizzle of olive oil. 6. Eat immediately.
