Cheats Lamb Kebabs | Another easy Summer supper, which can come together in minutes, with ingredients from @dunnesstores! #brandpartner Serves: 6 6 Dunnes Stores Moroccan Style Irish Lamb Kebabs 6 pitta breads 1 tub hummus 100g rocket leaves 1 lemon Olive oil, to drizzle Sea salt & freshly ground black pepper Optional extras: 250g cherry tomatoes, halves Small handful coriander leaves Place the lamb skewers to cook over a hot BBQ or a scorching hot griddle pan for 3 minutes either side or until medium rare. Turn as needed until you have a lightly charred exterior and a blushing interior. While the lamb cooks, toast the pita breads on the BBQ, griddle pan or just in a toaster. To assemble, spread each pitta bread with hummus and top with the lamb skewers, rocket, a squeeze of lemon juice, drizzle of olive oil and a sprinkle of sea salt. If you have them, some fresh coriander leaves and cherry tomatoes are great added in.
