Ingrediant Quantity Whole moong soaked overnight – 1 Cup Ginger chopped 1tbsp Green chilli chopped 3 Coriander ½ bunch Water as required Curry leaves 8-10 Salt to taste Red chilli powder ½ tsp Turmeric powder ½ tsp Cumin seeds ½ tsp Hing ¼ tsp Besan 2 tbsp Onion chopped 1 Carrot grated 1 French beans 3-4 Baking soda a pinch For peanut chutney Oil 2 tbsp Hing ½ tsp Cumin seeds ½ tsp Ginger chopped 1 tbsp Garlic chopped 1 tbsp Urad dal 1 tsp Tomatoes 3 Salt to taste Salted peanuts ½ cup Red chilli powder 1 tsp Turmeric powder ½ tsp Green chili chopped 2 Vinegar 1 ½ tbsp Sugar 1 ½ tbsp For tempering Oil 1 tbsp Hing ¼ tsp Mustard seeds 1 tsp Urad dal 1 tsp Whole red chilli 2-3 Curry leaves 10-15 Method For Waffle Add the soaked moong, ginger, green chili, coriander , curry leaves and grind to a fine paste Transfer the paste to a bowl and add salt, red chili powder , turmeric powder, cumin seeds, Hing, bean, and mix well. Add water as required to achieve uttapam consistency and let it rest for some time. Add onion, carrot, French beans, baking soda and 2 tbsp water. Pre Heat Borosil waffle maker Grease the waffle maker and add spoonful of the batter and cook for 15-20 mins For chutney In a non-stick kadhai heat oil, Hing, cumin, ginger, garlic, urad dal and sauté for 1 min Add roughly chopped tomatoes, salt , salted peanuts, red chili powder, turmeric, green chili and cook till pulpy Add vinegar, sugar and mix well Transfer mixture to borosil mixer grinder and grind to a fine paste Transfer the chutney to a bowl and keep aside Heat oil in an SS kadhai and add Hing, Mustard seeds, Urad dal, Whole red chilli, Curry leaves and sauté for 30 secs Add the tempering to the chutney and keep aside Once the waffles are ready transfer to tiffin along with the chutney.
