Add all the base mayonnaise ingredients to a tall jar or container to make the mayonnaise. Blend with an immersion blender until a thick emulsion has been created (mayonnaise). Add in the herbs and seasoning to taste and blend again until smooth. Place into an airtight container or jar and store in the fridge until ready to serve. Croquettes Method - 1. Preheat oven to . Line a baking tray with parchment paper and create eight rock salt mounds for the potatoes to sit on. 2. Pierce the potato skin with a fork, place it in a bowl, and drizzle with olive oil. Place it on the salt mounds and bake in the oven for 1 hour and 15 minutes. Remove it and let it cool to handle. 3. In the meantime, fry the bacon in a dry pan for 3-4 minutes or until golden and crispy. Remove and place into a bowl along with the bacon fat. 4. Remove the skin from the potato and mash it using a ricer or masher. Add the potatoes to the bacon. Add the cheese, spring onion (scallion), milk, salt, and pepper. Mix to combine and form into balls. 5. add plain (all-purpose) flour, beaten eggs, and breadcrumbs in three separate bowls. Roll the croquettes into the flour, then the eggs, and finally the bread crumbs. Repeat in batches. 6. Fry the croquettes in 180.c - 350.f vegetable or sunflower oil for 3-4 minutes until golden brown and crispy. Remove, drain and season with salt. 7.
