We will shred the drained jackfruit, mix it with scallion, bell pepper and cilantro and then envelope it in avocado and vegan mayo. You will not believe how delicious this is. If you close your eyes you will think you are eating meat. Jackfruit is an exotic and large fruit that grows in tropical areas. It can reach up to 80 pounds in weight! It is high in calcium, potassium and protein. It is high in antioxidants and in vitamin A and C. It also contains minerals. And, it is very budget friendly! You can prepare Jackfruit in many ways.
