In Culina: how to make Roman wine (conditum paradoxum)

In this episode of In Culina, our TLP chefs Jack and Charmian show us how to make wine the Roman way. Ingredienta: 1 large glass white wine or dessert wine 2 tsp honey 1 bay leaf Pinch of mastic (Arabic gum) ½ tsp ground black pepper 3 strands of saffron 4 fresh dates v/O: Heat the white wine and honey in a saucepan on a low heat until fragrant. Add the bay leaf, mastic and saffron and keep stirring. Destone the dates and add them both to the mixture, allowing it to simmer gently and infuse all the flavours. When ready, remove from the heat and strain into a cup to serve.
