Meringue Cream recipe for tulips This meringue works well for piping tulips shapes from russian piping tips. Ingredients: 120 gr egg whites 250 gr granulated sugar 1/3 tsp of lemon powder 1 pinch of vanilla Direction: 1. Fill medium saucepan one quarter full with water. Set the saucepan over medium heat, and bring water to a simmer. 2. Put egg whites in the heatproof bowl and start to wisk it on medium speed of electric mixer, when egg whites will looks like soap foam put inside sugar in three steps. After that place heatproof bowl with egg whites and sugar mass over saucepan. Whip constantly on medium speed of electrical mixer until sugar is dissolved, around 3-4 minutes. Don’t forget to add lemon powder and vanilla at this time. After that start to whip meringue on high speed of electrical mixer around 10-12 minutes until stiff, glossy peaks form.
