wok from home episode #8 | chilli chicken ramen - ramen fans. it’s the one you’ve been waiting for. tonight steve is serving up a wagamama institution. the chilli chicken ramen. there’s heat. there’s noodles. there’s that rich chicken broth. put down the packet ramen pick up the wok 😉 - the dish | makes 2 - 2 chicken breasts 500ml chicken stock 200g soba noodles 75ml sriracha 50ml sweet chilli sauce 2 tsp malt vinegar 1 tsp shichimi or paprika - stock base - 2 tbsp cornflour 150g butter or duck fat 1 tbsp fish sauce - garnish - 40g beansprouts 2 spring onions 1/2 red onion 1 chilli 1 lime - the stock | makes 1 litre - bones skin from cooked chicken 2 celery sticks roughly chopped 4 carrots, roughly chopped 4 onions, peeled roughly chopped 1 leek, roughly chopped 2 garlic cloves, crushed piece of ginger, peeled grated 2 thyme sprigs 6 sage leaves bunch of parsley
