Another recipe from the collection of the ancient Roman gourmet Apicius: sardines are stuffed with nuts, pepper and herbs, steamed in parchment paper and served with a treacly condiment. Hard to believe, but there is absolutely no garum (fish sauce) involved in this recipe! You need: whole sardines or sardine fillets, nuts, mint, pennyroyal (optional), black peppercorns, honey, concentrated grape must and olive oil.
