Vanilla extract 1 tsp. Gelatin, I used 100% grassfed beef gelatin 4 tsp. Cold water 1 cup organic whipping cream 1 - 2 Tbsp. maple syrup 1 tsp. Vanilla extract Directions: Blend the strawberries in a blender until smooth. Pour the strawberries into a fine mesh strainer over a bowl to remove the seeds. Once strained, pour the strawberry juice into a saucepan. Add the maple syrup and vanilla extract and stir. Cook this over medium heat or a good simmer. Once it starts to slightly boil, reduce the temperature so it doesn’t burn. Stir constantly for 10 - 12 minutes so the strawberries reduce about ¼. Turn off the heat to cool. Place the gelatin in a small microwavable dish that contains the water. Stir. Let this sit for 3 minutes to bloom. After 3 minutes place the dish in the microwave and cook for 10 second increments. I cooked mine for 15 seconds. It will get very hot so be careful. Once the gelatin is completely dissolved and looks clear, add 2 to 3 Tbsp. of the strawberry puree and stir to temper the puree. Then add this back to the pan with the rest of the strawberries and stir to combine. To quickly chill the strawberry puree, place the pan into another dish filled with ice water and stir occasionally. In another bowl whip the whip cream, vanilla extract and maple syrup using either a whisk, hand mixer or a kitchen aid type mixer until you get stiff peaks. Pour the chilled strawberry puree into the whip cream and fold gently until the color is uniform pink and there are no white streaks. Spoon into individual serving dishes and chill at least 4 hours. Serve with a dollop of whip cream, slices of strawberries and organic blueberries sprinkled on top. This makes a fantastic Valentine's dessert! Thanks for watching and sharing! Rockin Robin P.S.
