The easiest-ever 3-ingredient homemade tomato soup how to make the perfect grilled cheese! This is one of my FAVORITE lightened-up weeknight dinners that’s both nourishing & comforting, and quick enough to make in 30 minutes. First I’m sharing how to make tomato soup with canned tomatoes—which is way simpler (and often tastier!) than using fresh tomatoes. Just simmer those crushed tomatoes with sautéed onion and broth, then blend! And I like to serve that easy, creamy tomato soup with my ULTIMATE 3-cheese grilled cheese sandwich: with cheddar, Gruyère, and Swiss cheese on brioche bread! Of course, you can use more or less of whatever cheeses you want to make YOUR ultimate grilled cheese. For me, this meal captures so much of what I’ve learned on my own health journey, and what I hope to communicate on this channel: Some of the best things we can do for our health are reduce our stress around food, give ourselves permission to enjoy food, let go of self-judgment, and lighten up on ourselves!
