By request, here's how to make Ma-yu, or burnt garlic oil for tonkotsu ramen. This bitter oil tastes terrible on its own, but for some reason when added to tonkotsu soup, it elevates the flavors to a whole nother level. A lot of ma-yu recipes call for vegetable oil and or sesame oil which is fine, but this is a very easy to make version of Ma-yu that even beginners can pull off thanks to the ingredients.
