The dough must be prepared in advance, the day before baking. Inverted Syrup π« 350 g brown sugar 155 ml hot water 2/3 tsp lemon juice π 1/4 tsp baking soda Dough Ingredients π₯£ 250 g unsalted butter π§ 1 3/4 tbsp brown sugar 3 eggs π₯ tbsp flour 1/2 tsp baking soda 2 tsp cinnamon 2 tsp cloves 2 tsp ginger a pinch of nutmeg and cardamom First, you need to prepare inverted syrup: Dissolve sugar in hot water. Bring to a boil, then add lemon juice π . Cover tightly and simmer over low heat in a heavy-bottomed saucepan for 45 minutes. After that, cool the syrup and add a soda solution (dilute the soda with a dessert spoon of water). As soon as the foaming is over, the syrup is ready. Now let's prepare the dough. Heat the inverted syrup to a boil and add the butter. Beat eggs with sugar and combine with the remaining warm syrup. Mix well to dissolve the sugar. Add soda, and gradually, pouring through a sieve, stir in the flour. Place the dough in the refrigerator for a day. Remove the dough to take the required amount for rolling, and put the rest back in the refrigerator. On a surface dusted with flour, roll out a piece of dough into a layer of about 5 mm, cut out the gingerbread cookies, transfer to a prepared baking sheet and bake at 375F (190C) for 7-9 minutes (don't overdry cookies)! Vegan & Gluten Free Carrot Cake Recipe π₯ β’ 2 cups Gluten Free Flour (250g) β’ 1 tsp Baking Powder β’ Β½ tsp Salt β’ 2 tsp Cinnamon β’ 1 tsp Nutmeg β’ 1 cups Light Brown Sugar (250g) β’ 2 β cups Grated Carrot (255g) β’ 2 Flax Eggs (2 Tbsp Ground Flaxseed Meal with 6 Tbsp Water) β’ Β½ cup Canola Oil (120ml) or Vegetable Oil β’ 1 tsp Vanilla Extract β’ 1 cup Walnuts (100g) Chopped, Optional For the Dairy Free Frosting π₯£ : Vegan sour cream 340g 1/2 cup of sugar powder Instructions: β’ Preheat the oven to 350Β°F (180Β°C). Spray two 7-inch cake pans or two 8-inch cake pans (see notes*) with non-stick spray and line the bottoms with circles of parchment paper. β’ Sift the all purpose flour into a mixing bowl and add the baking powder, baking soda, salt, cinnamon and nutmeg. Mix together. β’ Add the light brown sugar and grated carrot to the mixing bowl. β’ Prepare your flax eggs by adding 2 tablespoons of ground flaxseed meal to a bowl with 6 tablespoons of hot water. Let it sit for a minute to become gloopy. β’ Add the flax eggs, oil, and chopped walnuts to the mixing bowl. β’ Mix everything together. If it seems like it won't come together and the mix is too dry then step away from the bowl for a couple of minutes and then come back to it. The carrots will have released more moisture into the batter allowing it to come together into a thick batter. β’ Divide the batter evenly between the two prepared cake pans. β’ Bake for 30 minutes or until a toothpick inserted into the center of one of the cakes comes out clean. β’ Allow the cakes to cool in the pans for a few minutes before transferring them to a wire cooling rack to cool completely. β’ While the cakes are cooling, prepare your frosting by mixing ingredients.
