Salmon Burgers Recipe Ingredients: 2 cans wild caught Salmon, drained ¼ cup plain yogurt, full fat ⅓ cup bread crumbs, I used Aleia’s Italian gluten free 1 tsp. Salt ½ tsp garlic powder 2 Tbsp. apple cider vinegar 3 eggs, whisked in a bowl before adding 3 green onion, finely chopped Handful of fresh parsley, finely chopped Olive oil to cover the bottom of frying pan Slaw 1 16oz package of pre shredded cole slaw 1 cup organic full fat yogurt 3 Tbsp. apple cider vinegar 1 tsp. Salt ½ tsp. Garlic powder 1 handful of fresh parsley, finely chopped ¼ fresh lemon, juiced 1 Tbspl olive oil Directions: For the salmon burgers combine all the ingredients in a large bowl and mix until well combined. This mixture should stick together when pressed together. If not, add a bit more yogurt. Form the salmon burgers using an ice cream scoop if you have one and your hands to shape the burgers. Preheat a large frying pan, I like using cast iron, for a nice crispy exterior. Preheat the pan over medium heat and then add a drizzle of olive oil to coat the bottom of the pan. Once the oil is hot, you can tell when it turns wavy as it heats, carefully lay each burger in the pan and cook for about 2 minutes or until it turns a golden brown. Flip the burgers and cook for an additional 2 minutes on the second side. Take the burgers out and place on a paper towel covered plate to absorb any excess oil. To make the coleslaw, place all the ingredients in a medium size bowl and whisk until combined. Fill a large bowl with the coleslaw and add ¾ of the dressing and toss with a couple of forks. Add more dressing if needed but you decide how dressed you like it. To serve, place some coleslaw on a plate or platter and top with the salmon burgers. Enjoy! To make this an appetizer: Make the salmon burger about ¼ the size of a regular burger. You would get approximately 32 bites.
