Borsch, the Ukrainian national dish. Ingredients: 3.5 lb beef shank 4 strips thick cut bacon 2 white onion 2 cloves garlic 3 beets 2 tbsp tomato paste 2 tbsp white vinegar 2 tbsp all purpose flour 5 carrots 3 bay leaves 1/2 head cabbage 2 russet potatoes 3 quarts water 10 ea black peppercorn Sour cream Dill Directions: Begin by browning off beef shanks in batches if you need to. Deglaze the pot used for browning with a little water to pick up fond. Add the rest of your water and add the beef shanks in. Bring to a simmer and skim any foam that rises to the top for the first 10 minutes. Add 1 onion, 2 carrots, 2 fresh bay leaves, and pepper corns. Cover and simmer for 1 1/2 hours. Remove the meat from the broth and strain the liquid. Pick the meat from the bones and discard any chewy fat. Strain and Reserve liquid. In a pan sauté beets for 3 minutes and add white vinegar.
