Kaak bi halib (soft milk cookies) are a traditional Lebanese speciality from the city of Zahle in Lebanon. These cookies are traditionally eaten at breakfast with a cup of tea or Arabic coffee. Ingredients: 6 cups flour 1 & 1/2 cups sugar 2 tbsp yeast 1 tbsp sugar 1/2 cup warm water 1 cup ghee 1 ts mahleb 1 ts vanilla 2 & 1/4 cups Liquid milk 1 tbsp orange blossom water 🧡Dissolve the yeast with sugar and water and leave for 10 mins to rise. 🧡In a pot, melt the sugar, ghee and milk on low heat until it has all dissolved. Remove from heat and allow to cool down just a little. 🧡In a mixing bowl add the flour and mahleb. Mix and then add the yeast and gradually add the ghee mixture bit by bit until you can start to see the dough forming. If it’s too sticky then add 1-2 tbsps more of flour. Knead the dough for 10 mins until it’s smooth and no longer sticky. Let it rest for 2-3 hours before shaping your kaak. &
