We Grew Corn in Alaska | Harvesting 200 Heads of Garlic

Cold climate gardening is a constant challenge but the reward of growing your own food never ceases to motivate and inspire us. We are grateful for our little plot of land that provides us with such abundance. With the warm spring much of Alaska experienced this year, plant growth in the high tunnel was rapid. We harvest beautifully pollinated corn, peppers, and tomatoes and get our hands dirty digging up our yearly supply of garlic. Onion Jam Recipe - 5-6 lbs sliced onions (red, yellow, white and shallots) 1 cup balsamic vinegar 1 cup red wine vinegar 1 cup honey 1/2 cup brown sugar 1/3 cup olive oil 2 tbs unsalted butter 1 tsp kosher salt 1 tsp pepper Chopped Oregano, Sage and Thyme Saute onion mixture with butter, olive oil and herbs of preference for 30 minutes, stir frequently. Add vinegar and continue to cook for an additional 30 minutes. Add honey and sugar, mix well, cook for another 15 minutes or until consistency desired is reached. Process onion
