We wish you all a very Merry Christmas and a Happy New Year!!! _____________________________________ RECIPES: Lingonberry sponge cake with cream cheese 🍰 SPONGE CAKE • Butter 82.5% - 150 g • Brown sugar - 250 g • Vanilla extract - 15 g • Eggs - 3 pcs. • Vegetable oil (I used walnut oil) - 80 g • Flour - 420 g • Baking powder - 15 g • Kefir - 350 g • Cocoa - 50 g Combine brown sugar (250 g) and soft butter (150 g) in a bowl. Mix until smooth. Add vanilla extract (15 g). Then add three eggs. Stir until smooth. Further flour (420 g), baking powder (15 g), kefir (350 g) and vegetable oil (80 g). Stir the dough. Add cocoa (50 g), knead the dough. Divide the dough into 3 tins (diameter 18 cm). Bake 130 until tender. Immediately wrap the finished cakes with cling film in contact and when they cool down, put in the refrigerator for 6 hours or overnight. CREAM CHEESE FROSTING • Butter 82.5% - 240 g • Powdered sugar - 150 g • Curd cheese - 750 g At the beginning, combine cold butter (240 g) with powdered sugar (150 g) and mix until a paste. Next is cold curd cheese (750 g). Mix until smooth. SOAKING LINGONBERRY • Lingonberry - 250 g • 120 g sugar • Lemon juice Grind lingonberries with a blender, add sugar, heat. Boil for a couple of minutes, pour in lemon juice and cool and cover with cling film. Next, we assemble the cake as shown in the video. Bon appétit!
