Pigeon peas Soaked 1 ½ cup Turmeric powder ½ tsp Tomato cubes 2 no’s Green chillies chopped 2 no’s Salt to taste Water as required. For The Fresh Sambar Masala. Oil 1 tbsp Bengal gram 1 tbsp Urad dal 1 tbsp Cumin seeds 1 tsp Coriander seeds 2 tsp Kashmiri red chilli whole 4-5 no’s Curry leaves 10-12 no’s Fenugreek seeds 1 tsp Turmeric powder ¼ tsp Asafoetida ½ tsp Salt to taste. For Sambar. Oil 2-3 tbsp Mustard seeds 1 tsp Dry red chilli 3-4 no’s Asafoetida ½ tsp Urad dal ½ tsp Bengal gram ½ tsp Curry leaves 10-12 no’s Shallots [madras onion] ½ cup Drumstick, remove edge 1 no cut into 1 inch long Carrot ½ no cut into cubes White pumpkin ½ no cut into cubes Red pumpkin 1-2 inch cut into cubes Brinjal 2 no’s cut into cubes Salt to taste Turmeric powder ½ tsp Red chilli powder 1 tsp Water as required Sambar masala 3 tbsp Tamarind pulp 3-4 tbsp Jaggery 1 lump/small block Coriander chopped & Sprig for garnish. Method:- For boiling dal:- 1. Take a cooker add soaked dal, turmeric powder, tomatoes, green Chillies, salt and water cover the cooker lid and cook till 6-8 whistle and keep aside. For making Sambar masala:- 2. Take a pan add 1 tbsp oil heat up. 3. Now add Bengal gram, urad dal, cumin seeds, coriander seeds, whole red chilli, curry leaves and fenugreek seeds mix well and roast until its aroma comes out. 4. Now switch off the flame. Then take a mixer grinder add the roasted masala, turmeric powder, asafoetida and salt. 5. Then cool down the masala and grind into a powder and keep aside for further use. For making Sambar:- 6. Take a kadai add oil, mustard seeds, dry red chilli, asafoetida, urad dal, Bengal gram mix well. 7. Then add curry leaves, shallots mix well. 8. Then add Drumstick cut into 1 inch long, carrot, white pumpkin, red pumpkin and brinjal cubes mix well and saute for few mins. 9. Then add salt, turmeric and red chilli powder mix well and saute for few sec. 10. Now add water mix well and bring to a boil. 11. Now open the cooker lid and mix the dal with the wooden masher. 12. Then pour the dal into the sambar kadai and mix well. 13. Now add sambar masala and stir for a while. 14. Then add tamarind pulp and jaggery mix well and cook for 20 mins. 15. Remove in a serving bowl and garnish with chopped coriander. 16. Serve hot with boiled Rice/Idli.
