Inspiration for gentle cozy autumn in English countryside - visiting a beautiful National Trust, a quaint village called Bibury in the Cotswolds and baking caramel apple cinnamon buns. = Sticky Caramel Apple Cinnamon Bun recipe = Dough: 360g plain flour ( 2 tbsp at the end) 45g sugar 7g packet of dry activated yeast / or 2 1/2 tbsp 1/2 tsp salt (omit salt if using salted butter) 120g milk 75g unsalted butter (softened) 1 tsp Vanilla extract 1 egg 60g room temp water Warm up your milk in the microwave for about 20 seconds - it should be warm to touch but not boiling hot. You should be able to touch it with the finger without burning yourself. If it's too hot let it cool down a little bit. To the warm milk add 1 tsp of sugar and a packet of yeast, mix. Let it sit for about 5 minutes - yeast will bubble up on top. Combine flour, salt, the rest of your sugar. Make a little well in the middle and pour yeast milk, softened butter and vanilla - mix well. Add 1 egg, mix, then add water and knead your dough well. It will be very sticky in the beginning, so start by mixing with a spoon and then start mixing by hand. It will take about 8-10 minutes of light kneading for the dough to become less sticky. Cover with a towel and let the dough rest in a warm place for 1-2h or until it doubles in size. Filling: 60g softened butter 60g brown sugar 2 tbsp cinnamon A handful of chopped pecans 1-2 small grated apples In the meantime prepare the filling. Mix sugar with cinnamon. Chop pecans. Grate 1-2 apples and squeeze out their juice. Once the dough has risen, spread it into a rectangle about 1-2cm high. Spread a thin layer of softened butter on top. Sprinkle sugar, chopped pecans and grated apple. Roll the dough and cut the buns (about 4 finger wide). I had 8 buns in total. Cover with a towel and let the buns rest for 30 mins to 1h in a warm place. Preheat the oven to 180C/ 356F Bake for 18 minutes. Pour warm caramel sauce on top and sprinkle with extra pecans.
