The long and winding road that leads to your door, was describing the crazy time the Beatles had gone through to get their music to the fans. And when he says that the road will never disappear, he means that their music will not be forgotten. Paul was also the one that left, so it would make sense that he would be the one to tell people its been fun, but it's time to go.
