Kaju katli, also known as kaju barfi, is a traditional Indian dessert characterized by its diamond shape, made with cashew nuts, sugar, cardamom powder, rose water and ghee. This sweet treat often comes wrapped in an edible silver foil, I have given a twist by adding blue pea tea powder. Ingredient Quantity Cashew nut powder 2 cups Water ¼ cup 2 tbsp Sugar 200 gm Blue pea tea powder 1 tbsp Ghee 1 tbsp ½ tsp Cardamom powder 1 tsp Rose water 1 tsp Silver vark (optional) for garnish. Method: 1. In a mixture jar add cashew nuts in small batches and grind it into powder form. 2. Once it is done sieve it. 3. Take a kadai add water and sugar mix well and cook till 1 string consistency. 4. Now check if your sugar syrup is too thick then add more 2 tbsp of water and mix well. 5. Now add blue pea tea powder and mix it well. 6. Add cashew nut powder in it and cook till it nicely combined. 7. To check the kaju katli is ready take a little piece of dough and make a round of it to check whether it is ready or not. 8. Once it starts getting thick means its ready to give shape. 9. Our dough is ready. 10. Now add ghee, cardamom powder and rose water mix it properly 11. Now remove the dough in a bowl and add ghee mix it well and let it cool down completely. 12. Now on a table apply ghee and roll the kaju kalti dough with butter on it. 13. Then apply the sliver vark on the katli. 14. Now cut the dough in the kite shape. 15. Remove in a serving plate. 16. Our Blue lagoon kaju katli is ready to eat.
