Heng Hwa Fried Bee Hoon or Fried Vermicelli is a popular noodle dish at One Michelin starred PUTIEN restaurant. Don't be fooled by this plain looking dish. It is packed with a lot of flavours. Traditionally, Heng Hwa Fried Rice Noodles are made with pork bone stock, but we didn't have any on hand, so we used chicken bullion cube instead to save time. The end result tastes is just as good. Heng Hwa Bee Hoon have a finer, silkier and springier texture than other types of vermicelli. You might be able to find it at a Chinese supermarket near you. We had a hard time finding these, but we eventually found them in Singapore at Yue Hwa. In case you didn't know, Heng Hwa is a minority Chinese dialect group, with roughly only 25,000 people in Singapore belonging to this group.
