Korean zucchini salad recipe Ingredients for 4-5 servings * 1 large zucchini * 1 large carrot * 2 peppers * 1 tsp salt * 1 onion * 3 cloves of garlic * 1/2 tsp coriander * 1/2 tsp black pepper * 1 tsp sugar * 1 tsp vinegar * 1 tbsp soy sauce * 2-3 tsp sesame seeds Preparation - Cut carrots, peppers, zucchini and onion into straws. - Chop garlic - Season zucchini and carrots with 1/2 tsp salt to release excess moisture. - Fry onion and garlic in a pan for 3-4 minutes, add coriander and black pepper, mix thoroughly and fry for a couple more minutes. - Remove carrots and zucchini from moisture thoroughly - In a bowl, mix carrots, zucchini, peppers, onion and garlic dressing. - Add soy sauce, sugar and vinegar and mix thoroughly. - Add sesame seeds. - Enjoy!
