Closedburger Bun Dough Ingredients: - 500 g flour - 180-200 g lukewarm water (add more if necessary) (1 cup) - 80 g milk or buttermilk (half cup) - 1 egg (M) - 10 g salt (1 teaspoon) - 30 g honey or sugar (2 tablespoons) - 40 g soft butter (2.5 tablespoons) - 5 g dry or fresh yeast (half packet) Topping: - 1 egg yolk - A little water - White sesame seeds Instructions: 1. Put all the dough ingredients except the butter in a mixing bowl and knead for five minutes. 2. Add the butter and knead for another five minutes. 3. Transfer the kneaded dough to a lightly oiled, covered container and let it rise for 40 minutes. 4. After the rising time, divide the dough into 7 or 8 equal pieces (I divided it into seven since I like large hamburger buns) and flatten them. 5. Place the cooked meat inside, add sauce, pickles, cheese, and caramelized onions. 6. Close the dough. Beat one egg yolk with a little water and brush it over the buns, then sprinkle with white sesame seeds. 7. Bake in a preheated 180°C oven on the lower rack until golden brown. For the Hamburger: - 500 g ground beef - Salt - Black pepper Instructions: 1. Shape the ground beef into round patties of your desired size and place them in a heated pan. 2. Sprinkle with salt and black pepper. 3. Press down to flatten and cook on both sides. For the Sauce: Ingredients: - 1/2 cup mayonnaise - 1/3 cup ketchup - 2 tablespoons mustard - 1 or 2 pickles (finely chopped or grated) - 1 tablespoon pickle juice - 1 teaspoon paprika - 1 teaspoon garlic powder or grated garlic - 1 teaspoon onion powder - Salt - A little black pepper Instructions: 1. Mix all the sauce ingredients in a jar.
